Cottage Cheese Cookies

1 C. Sugar
½ C. Butter
1 C. Cottage Cheese
1 Egg
1 ¾ C. Flour
½ tsp. Salt
½ tsp. Baking Soda
1 tsp. Vanilla
1 C. Coconut

Combine first 8 ingredients and roll in coconut. Bake at 375’ for 10-15 minutes.
