1 C. Applesauce
2 C. Sugar
4 Eggs
1 C. Buttermilk
1 tsp. Coconut Extract
1 C. Coconut
1 C. chopped Nuts
3 C. Flour
1 tsp. Baking Soda
½ tsp. Salt
Combine first 7 ingredients. Sift in dry ingredients. Bake at 325’ for 70 minutes. Poke holes in hot bread and pour on coconut glaze.
Coconut Glaze
1 C. Sugar
½ C. + 2 Tbsp. Water
1 tsp. Coconut Extract
Dissolve sugar in water and extract. Pour over warm coconut bread.
