Mint Zucchini Cookies

3 C. Flour
¾ C. Cocoa Powder
2 tsp. Baking Soda
¼ tsp Salt
2 Tbsp. Oil
1 ½ C. Sugar
1 tsp. Peppermint Extract
2 ½ C. Zucchini, shredded
1 C. broken Walnuts (opt.)

Combine dry ingredients, then wet ingredients and add together. Add nuts and drop by spoonfuls onto cookie sheet. Bake at 350’ for 12 minutes.
