3 Eggs
¾ C. Oil
1 ½ C. Sugar
¼ C. Lemon Juice
2 tsp. Lemon Zest
1 3.4 C. shredded Zucchini
2 C. Flour
2 tsp. Baking Powder
¼ tsp. Salt
¼ tsp. Baking Soda
½ C. Nuts (opt)
Cream first 5 ingredients. Add zucchini. Sift remaining dry ingredients and mix thoroughly. Bake in greased and floured 9x13 pan and bake at 350’ for 45 minutes
